Raw Brownie Bites

Don’t be fooled by these deliciously fudgy little treats. Even though the recipe for these Raw Brownie Bites is extremely simple with only a few ingredients involved, they definitely pack a chocolatey-sweet punch!

Lately, this has become my go-to dessert for those nights when I crave something sinful but I don’t want all the guilt associated with truly sinful and unhealthy sweets. Better yet, I don’t have to worry about putting too much effort in (or dirtying my kitchen). They’re also a perfect pre- or post-workout snack when I need a good burst of energy!

Ingredients
  1. 1 cup walnuts
  2. 1/4 cup raw cacao or carob powder
  3. 1 tsp. vanilla extract
  4. 1/8 - 1/4 tsp sea salt
  5. 1 rounded cup of chopped dates or raisins (or a combination of the two)
  6. up to 1 Tbs. water
Instructions
  1. Grind the walnuts in a food processor. When walnuts are broken down (but not yet turned to butter), add the cacao/carob powder, vanilla, and salt and blend well.
  2. Add the chopped dates/raisins a little bit at a time. You may have to stop every once in a while to scrape down the sides and make sure ingredients are distributed evenly.
  3. By now, the mixture should be pretty sticky. If it doesn't hold together when pinched, add a small amount of water (up to 1 Tbs.) and blend, checking the consistency as you go until the mixture holds together.
  4. To form the bites, roll a little more than a Tbs. of the ingredients at a time between your hands. Continue until all of the ingredients have been used up. At this point, I recommend putting the bites in the fridge for about an hour to help them firm up. If you're impatient like me, you can also go ahead and dig in!
Notes
  1. Store in the fridge in a sealed container for up to 5 days or freeze in an airtight package for longer.
